Vines averaging 20 years of age. Grape varieties: Syrah (95%) Viognier (5%).

Navarin of lamb shoulder with olives, roast rabbit, rib of beef, goose stuffed with chestnuts, veal kidneys, pheasant, woodcock, pigeon…
Serving temperature: 16°C – 18°C.
VINIFICATION & MATURING
Long vatting period (3 weeks) after destemming in concrete vats
temperature-controlled. Malolactic fermentation.
Aged 15 months in oak barrels, 20% of which are new.
