AOC Condrieu, dry white wine
100 % Viognier
Condrieu is a pale-gold wine, which expresses a complex aromatic scale, ranging from a violet fragrance to an aroma a bit more violent of plum, peach and apricot as well as dry grilled fruits. Bold and rich in the mouth, without too much sweetness, nor acidity, this wine often has a deep and silky finish. We can discern in its persistence on the tongue the most delicate aromas.
Cuvée Les Ravines delivers to the palate floral notes with complete freshness.
soil and climate : The parcells are located on la Ronchade, Côte Chatillon, Vergelas and la Caille which are all in the district of Condrieu. This is an altered granite soils on steep grades of 25 to 40 degrees and with a south/south-east orientation. It enjoys warm early mornings and cold evenings. The climate is temperate, with an average rate of rainfall, and warm, dry summers.
wine-making process :After moderate pressing with a pneumatic wine-press, the must are cooled down from 12 to 14 degrees C and left to settle for 24 hours. The alcoholic fermentation is controlled by the cold (18-20 degrees C) for about 10 days. The wine is fermented. The malolactic fermentation generally occurs in spring during maturing in stainless steel tanks (65%) and a small part (35%) in oak barrels. After that, the wine is fined and filtered, and ready to be sold from the property 12 months after the harvest.
